Ingredients:

1-Moringa Soup/Shorba

  • Moringa Drumsticks – 3–4 (cut into pieces)
  • - Tomatoes – 2, finely chopped
  • - Ginger– 1-inch piece, grated

  • - Garlic – 4–5 cloves, crushed
  • - Green Chillies – as per taste, finely chopped
  • - Black Pepper Powder – ½ teaspoon
  • - Turmeric Powder – ¼ teaspoon
  • - Cumin Seeds – ½ teaspoon
  • - Ghee or Oil – 1 teaspoon
  • - Salt – as per taste
  • - Water – 4 cups
  • - Fresh Coriander Leaves (chopped) – for garnish

Culinary process

1. Boil the Drumsticks

In a pressure cooker or deep vessel, add the drumstick pieces along with 3–4 cups of water, a pinch of salt, and turmeric powder. Boil for 2–3 whistles in a cooker or simmer in an open vessel until the drumsticks soften completely.
2. Extract the Drumstick Pulp

Once cooked, allow the drumsticks to cool slightly. Then, mash them thoroughly with your hands, separating the pulp from the fibrous strands. Strain the mixture to extract the juice, discarding the fibres.


3. Prepare the Seasoning

Heat ghee or oil in a pan. Add cumin seeds and let them splutter. Stir in the crushed ginger, garlic, and chopped green chillies, sautéing until aromatic.

4. Cook the Tomatoes

Add finely chopped tomatoes to the pan and cook until they soften and blend into the mixture.


5. Combine Everything

Pour the extracted drumstick juice into the prepared seasoning. Add salt to taste and black pepper powder. Let the soup simmer on medium heat for 5–7 minutes until it develops a rich aroma.

6. Final Touch & Serving

Once the shorba is well-boiled, turn off the heat and garnish with fresh coriander leaves. Serve hot for a nutritious and flavourful experience.

Culinary process:

  • Heat oil in a pan and add cumin seeds. Let them splutter.
  • Sauté onions until golden brown, then add garlic and green chillies.
  • Add tomatoes and cook until soft. Stir in turmeric, red chilli powder, coriander powder, and salt.
  • Add potatoes and drumstick pieces, mixing well with the spices.
  • Pour water, cover, and let it simmer until the potatoes and drumsticks are tender.
  • Sprinkle garam masala, mix well, and cook for another 2 minutes.
