Salt (to taste)

For the Masala Paste: 2 medium onions (chopped)
2 cloves garlic (chopped)
2 medium tomatoes (chopped)
2 dried red chilies
1 tsp cumin seeds
1 tsp coriander seeds
For Cooking: 2 tbsp mustard oil
½ tsp cumin seeds
½ tsp coriander powder
1 bay leaf (tej patta)
Salt (to taste)
1 tsp kasuri methi (dried fenugreek leaves)
Fresh coriander leaves (chopped, for garnish)

🍳 Instructions
- Step 1: Prepare the Soya Chunks Boil soya chunks in water for 2 minutes.
- Drain and squeeze out excess water.
- Lightly fry the chunks in oil until golden. Set aside.

- Step 2: Make the Masala Paste In a pan, roast chopped onions, garlic, tomatoes, red chilies, cumin seeds, and coriander seeds.
- Cook until browned and aromatic.
- Let it cool slightly, then grind into a smooth paste.
- One cup Yogurt mixed with coriander, cumin seeds and red chilly powder,
- Step 3: Cook the Curry Heat mustard oil in a pan.
- Add cumin seeds, coriander powder, and bay leaf. Sauté for 2 minutes.
- Add the ground masala paste, Yogurt paste and cook on low flame for 5–7 minutes until oil starts to separate.
- Add the fried soya chunks and mix well in to the prepared paste.
- Cook for 10 minutes on low flame, stirring occasionally.
- Add salt to taste and mix in kasuri methi.
- Cook for another 5 minutes.

Step 4: Garnish & Serve Sprinkle chopped fresh coriander leaves.
Serve hot with roti, naan, or steamed rice.
