  • 1 Cup all purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon oil
  • Water (as needed for kneading)

Filling / Stuffing:

  • 1 cup finely chopped cabbage, ½ cup grated carrots
  • ½ cup finely chopped spring onions
  • 1 cup green coriander
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon soy sauce ( not necessary)
  • Salt and black pepper to taste

Step 1: Preparing the Dough

  • The base of any good Momo is its wrapper, which needs to be soft yet sturdy enough to hold the filling. In a mixing bowl, combine all-purpose flour, salt, and a bit of oil—the oil helps give the dough a subtle elasticity. Gradually add water, little by little, while kneading continuously.
  • Once the dough reaches the right consistency, cover it with a clean, damp cloth and let it rest for 30 minutes. This allows the flour to absorb moisture properly, making the dough easier to work with while also improving the texture of the Momo's.

Step 2: Making the Filling or Stuffing

  • The filling of Nepali Momo's is simple yet packed with layers of flavour. Start by heating a tablespoon of oil in a pan—you can use mustard oil for a bold, traditional touch or opt for regular vegetable oil.
  • Add finely minced garlic and ginger, letting them sauté until fragrant and golden. These aromatics create a strong base, bringing warmth and deep flavours to the dish.
  • Now, toss in shredded cabbage, grated carrots, and finely chopped spring onions. Stir-fry everything on medium heat for 2-3 minutes—this helps maintain a little crunch in the vegetables while ensuring they blend well with the seasoning.
  • To finish, season with soy sauce, salt, and freshly ground black pepper. While the salt and pepper balance out the flavours. Give it a good mix, then set the filling aside to cool before assembling the Momo's.
  • You can add one spoon of butter in filling mixer to make it more juicy (optional)

Step 3: Shaping the Momo's:
  • Divide the dough into small, equal-sized balls. Roll each ball into a thin circle, ensuring they are uniform in thickness. Place a spoonful of the filling in the centre of each dough circle, making sure not to overfill.
  • Now comes the fun part—folding and pleating the edges! Start by gathering the edges of the circle and pinching them together in small folds, creating a pleated, crescent-shaped or round dumpling.
