Ingredient of Nepali Chicken Curry often called "Kukhura Ko Masu"
For Marination:
- 1 kg chicken thighs or breasts
- 10cm ginger finely chopped or use lazy garlic
- 5 garlic cloves crushed
- 1 tsp ground cardamom or leave them out!
- 1 tsp turmeric
- 200ml Greek yogurt
- Juice of 1 lemon
For the curry:-
2 tbsp oil (mustard oil )
Ingredients for Marination - 4 onions sliced Bunch fresh coriander stalks chopped
- 250g plum tomatoes roughly chopped or half can tomatoes
- 3 bay leaves
- 2 tsp ground coriander and cumin seed
- 2 tsp ground cumin
- Cinnamon stick or use a pinch of ground or desi spices from Nepali Kitchen ( specially use spices with home made masala.
Step 1: Preparing the Chicken Marinade
- To make this dish rich in taste, start by marinating the chicken. Mix together bone-in chicken thighs with a blend of yogurt, turmeric, red chili powder, salt, and a splash of lemon juice.
- This step helps tenderize the chicken while allowing it to absorb the spices. If you have time, let it rest in the fridge for up to 2 hours. If you’re short on time, even 30 minutes will make a difference. Marinating the meat enhances its juiciness and ensures that the flavors penetrate deep into each piece.
Step 2: Creating the Flavorful Base
- Nepali cuisine relies on a carefully crafted base of aromatic ingredients to build depth and richness. Start by heating a generous lug of oil in a sturdy pan. Once the oil is hot, add chopped onions, bay leaves, and coriander stalks, letting them sauté gently for about five minutes.
- The onions will soften and turn golden, releasing their natural sweetness. The bay leaves infuse subtle earthiness, while coriander stalks lend a fresh citrusy note that carries through the dish.
Step 3: Infusing the Spices
- Once the onions have softened, it’s time to build complexity with spices. Add cumin, coriander powder, garam masala, and a hint of cinnamon to the pan. Stir them gently into the onions, allowing the oils to absorb all the warm, aromatic notes.
- Let them cook for another five minutes, which helps bloom their flavors, ensuring that every spice releases its essence into the dish.
Step 4: Cooking the Chicken
- Now comes the star of the dish—the marinated chicken thighs. Add them into the pan and let them develop a rich golden color on both sides. This browning process seals in the flavors and helps create depth in the curry.
- Turn each piece carefully, allowing the marinade to caramelize slightly, enriching the overall taste.
Step 5: Adding the Tomatoes
- Once the chicken has browned beautifully, pour in freshly chopped tomatoes. This ingredient plays a crucial role in creating a smooth, slightly tangy gravy that balances the bold spices.
- Stir everything well and let it simmer uncovered for a few minutes until the tomatoes break down completely. The goal is to achieve a sauce that is rich yet well-integrated, coating each piece of chicken with a vibrant base.
Step 6: Slow Cooking for Maximum Flavour
- This step requires patience, but trust me—it makes all the difference! Once the tomatoes have softened, add two cups of water to help create the right curry consistency. Turn the heat to low and let the dish simmer gently for one hour, allowing the flavors to meld beautifully.
- You can also opt for a slow cooker, setting it to low and cooking for the same duration. This slow cooking process ensures the chicken absorbs the masala, becoming succulent and packed with spice-infused goodness.
Step 7: Finishing Touches & Garnish
To elevate the flavors, sprinkle a little more garam masala and let it sit for a couple of minutes before turning off the heat. Garnish with fresh cilantro leaves, which add a refreshing brightness to balance the deep spices.Step 8: Serving & Enjoying
